Weightlifting?

I've been trying to do low reps, higher weight to build muscle. I've definitely noticed an increase in strength and some muscle gain over the past 2 months, but should I be "breaking myself down" when I lift weights…meaning start off with a high weight, do a set or two, lower the weight, do a set or to, etc. until I've completely fatigued my muscles? will this help add more definition?

Doing drop-sets or "breaking yourself down" as you call it, is a good way to gain muscle. But, it will not add more definition, definition is gained through dieting. Eat clean, eat a lot, and train hard and you will put on lean muscle mass while losing fat and will become bigger and more defined.
